Widely considered the holy grail of Copenhagen hot dogs, John's has built a massive cult following, adored by everyone from Michelin-starred chefs to late-night revelers looking for the perfect post-bar meal.

Situated just outside the Copenhagen Central Station and right across the road from the iconic entrance to Tivoli Gardens, the cart is impossible to miss. Even before we walked up to the window, the savory, smoky aroma of grilling sausages pulled us in.

A Legend Built on Quality

What makes John's stand out in a city packed with pølsevogne (hot dog wagons) is the owner's absolute, obsessive focus on quality. John is a local legend here, and he doesn't cut corners.



Instead of mass-produced sausages, he sources all of his meat from the picturesque Danish island of Bornholm. But the magic doesn't stop at the sausages. John's is famous for its condiments—he makes all his own mustards, tangy relishes, and an array of infamously fiery hot sauces entirely from scratch. You can instantly taste the difference between a standard street cart squeeze bottle and John's homemade concoctions.

Our Experience at the Cart

Stepping up to the window, we were greeted by a huge array of hot dogs sizzling away on the grill. The menu was a little overwhelming at first glance, but the guys inside the stall were incredibly welcoming. Despite the steady stream of customers, they were patient and took the time to explain to us in English all the different variations and combinations we could have.



After weighing our options—and eyeing a few of those intimidating hot sauces—we decided to keep it classic. We went for the original non-spicy hot dog loaded with absolutely all the toppings: crispy fried onions, raw onions, tangy pickles, rich remoulade, ketchup, and a swipe of their house mustard.

The verdict? A genuinely delicious hot dog! The snap of the Bornholm sausage perfectly balanced the crunch of the onions and the tangy sweetness of the pickles and remoulade.

If you ever find yourself wandering out of Central Station—or exploring the lively Meatpacking District, where John has a second outpost—do yourself a favor and get in line. It truly is the holy grail of Copenhagen street food, and we are already planning our next visit.
