The Plaza Hotel & Casino has announced that the iconic burger chain is finally coming to Downtown Las Vegas. But this isn't just a standard storefront opening; the Plaza is debuting a unique concept that you won't find at any other Five Guys location.
The "Carousel" Hot Dog Cart
Before the full restaurant even opens its doors, Five Guys is launching a pop-up style hot dog cart this spring.
Stationed right outside the famous Carousel Bar—under the Plaza’s glittering iconic dome—the cart will serve the brand’s all-beef dogs, split lengthwise and grilled. It’s a genius move designed to catch pedestrians walking between Fremont and Main Streets with the undeniable smell of grilled meat.
"The Five Guys hot dog cart will be a great addition to Carousel Bar, drawing people in... with its undeniable aroma of delicious classic American fare," said Jonathan Jossel, CEO of the Plaza Hotel & Casino.
The Main Event: Summer 2026
Following the spring debut of the cart, the full 2,200-square-foot restaurant will open on the casino floor in Summer 2026.
This marks the first Five Guys to ever open in Downtown Las Vegas, ending a decade-long search by the franchise for the perfect spot.
- The Vibe: The space will feature an outdoor patio and indoor seating for 60 guests.
- The Hours: Perfect for the Vegas crowd, it is expected to stay open from 10 a.m. to 2 a.m., seven days a week.
Why It Matters
For years, Downtown dining has been a mix of high-end steakhouses and quick bites, but a major gap remained for premium fast-casual burgers.
"Five Guys found the perfect home at the Plaza," said Lucas Mitchell, a Five Guys franchisee. "We can't wait to be a part of the Plaza."
So, if you are planning a trip to Fremont Street later this year, prepare your stomach. The boardwalk fries are coming.
